‘Cool Hand Cuke’ Cocktail

Ingredients
1 1/2 oz gin or vodka (for an NA version, try Optimist Botanicals FRESH)
1/2 oz Lillet Blanc or Manzanilla Sherry
1/2 cucumber, sliced (plus extra for garnish)
8–10 fresh mint leaves (plus sprigs for garnish)
1/2 oz simple syrup (or to taste)
1 oz fresh lime juice
Sparkling water or club soda

Instructions
In a cocktail shaker, add cucumber slices, mint leaves, and simple syrup. Muddle gently to release the flavors.
Add fresh lime juice and your choice of gin or vodka, if using. Fill the shaker with ice, cover, and shake well.
Strain the mixture into a glass filled with ice. Top with sparkling water or club soda for a refreshing fizz.
Garnish with extra cucumber slices and a sprig of fresh mint.
