Elderberry Cordial

As the cold season approaches, this elderberry tonic is the perfect way to give your immune system a gentle boost with a rich blend of antioxidants and vitamins. Starring elderberries as the main ingredients, which are celebrated for their immune-supportive properties, this tonic combines the tart, fruitiness with warming spices like ginger, cinnamon, and cloves while rose and hawthorn berries deliver hearth healthy benefits.

Ingredients

  • 1 cup dried elderberries (or 2 cups fresh elderberries)

  • 1/2 cup dried hawthorn berries

  • 3-4 tbsps culinary rose hips/buds

  • 4 cups water

  • 1–2 inches fresh ginger, sliced

  • 2 cinnamon sticks

  • 3–5 whole cloves

  • 1/2 cup raw honey (or to taste)

  • 1–2 tsps fresh lemon and/or orange juice and zest

INSTRUCTIONS

In a medium saucepan, combine the elderberries, water, ginger, cinnamon stick, cloves, and turmeric, if using.

Bring the mixture to a boil, then reduce the heat to a gentle simmer. Let it simmer for about 30–45 minutes, or until the liquid reduces by half.

Remove from heat and let the mixture cool slightly. Strain the liquid through a fine-mesh sieve or cheesecloth into a jar or bottle, pressing down on the berries to extract as much liquid as possible.

Once cooled, stir in the honey and lemon juice, adjusting sweetness to taste.

Store the elderberry tonic in the refrigerator for up to two weeks.

Take 1–2 tablespoons daily during cold season, or mix it with warm water, tea, or sparkling water for a soothing, healthful drink.
